Chopped Salad

Here's a dish to make on a night that's too hot to turn on your stove. Cool, crunchy, refreshing, goes with anything… chop the veggies into the shape you prefer – cubes, half-moons or rounds. 

Ingredients

3 cucumbers, chopped and peeled (if you like)

2 tomatoes, chopped

1 cup spinach or romaine lettuce, chopped

2 Tbsp vinegar (rice or apple cider)

1 Tbsp olive oil

Juice from 1 lemon or lime

½ cup chopped basil, cilantro or mint

Salt and pepper to taste

Directions

1. Combine all the vegetables in a bowl and mix to together, adding the oil, vinegar and lime.

2. Taste and adjust as needed – you may find that you would like to add more tangy vinegar or herbs to your salad.

Variations

  • Add 1/2 cup crumbled or cubed feta or fresh cheese or a 1/4 cup of plain yogurt. 
  • If you want to make this more of a meal, add 1 cup of a cooked grain such as rice, millet or quinoa to your salad.
  • Add 1/2 cup raw snap peas or par-boiled or steamed green beans, chopped.
